Wedding cakes

Wedding cakes are baked, structured and transported to hold their shape through a South African afternoon, which is as much an engineering problem as a design one.

A wedding cake is designed, baked and assembled by a specialist, then transported and often finished on-site, usually as a distinct booking from the caterer even where the same kitchen supplies both. Tiered cakes carry internal support to hold their weight and shape, which matters more in South Africa's heat than the design itself.

Most weddings with a formal reception include a cake in some form, whether a full tiered design or a smaller cutting cake with a simpler dessert served to guests. A couple prioritising other elements of the day can scale this down to a small cake for photographs and cutting, with dessert handled entirely by the caterer.

This guide treats wedding cakes as its own professional category. Verified listings appear once their published information has been checked; where none is verified yet, the guidance below stands on its own.

Where to go next

Gavin would rather leave a page empty than fill it with names he cannot stand behind, and checking a business properly takes time, so these pages fill slowly.

In the meantime, the guidance above is the part that helps: how to choose, what to ask, and what usually goes wrong. If you want a name, Gavin will tell you who he has worked alongside, and why.

How to choose

Choosing well.

Ask how the cake travels from kitchen to venue, not only how it looks in a finished photograph. A design that holds perfectly in an air-conditioned kitchen can behave very differently after an hour in a car boot on a hot Highveld afternoon.

Judge the structure, not only the decoration

Ask what is inside a tiered design: the internal supports, the type of icing used and how it responds to heat. A cake baker who can explain this clearly, rather than only describing the decoration, is showing you the part of the job that actually determines whether the cake survives the day.

Match the design to your venue and the season. An outdoor summer wedding on the Highveld, where afternoon temperatures and sudden thunderstorms are common, needs a sturdier structure and a firm plan for where the cake sits before cutting than an indoor winter reception does.

What to ask

  1. How is the cake transported, and is delivery to the venue included in the price?
  2. What internal structure supports a multi-tier design, and how does it hold up in heat?
  3. Is refrigerated or shaded storage available at the venue before the cake is displayed?
  4. Can the cake accommodate specific dietary requirements, such as nut-free or gluten-free, and is that made in a separate space to avoid cross-contact?
  5. Is a cake stand or display table provided, or does that need to be arranged separately?
  6. Is there a cutting fee, or a separate charge for slicing and serving to guests?
  7. How far in advance is the design finalised, and can changes be made closer to the date?

Contracts and logistics

A deposit secures the date, with the balance usually due shortly before the wedding, and cancellation terms are typically scaled against notice given, since ingredients and time are committed ahead of the day. Delivery is usually scheduled for a specific window on the wedding day itself, timed around the venue's access hours and the point at which the cake needs to be on display.

Heat is the recurring problem: a Highveld afternoon in summer, or any outdoor reception without shade, can soften icing and shift a tiered structure within hours, so ask where the cake will stand before cutting and whether that spot is shaded or cooled. Any allergy or dietary requirement should be confirmed with the baker directly and in writing, separately from the caterer's own dietary arrangements.

Checklist

  • Confirm delivery is included and agree the exact delivery window
  • Ask about internal structure and how the design holds up in heat
  • Arrange shaded or refrigerated storage at the venue before display
  • Disclose allergies and dietary requirements directly to the baker in writing
  • Confirm whether a cutting fee or serving charge applies
  • Arrange a cake stand or display table if one is not provided
  • Finalise the design with enough lead time for the baker's own schedule

Questions

Asked often.

How far in advance should a wedding cake be ordered?

Popular cake designers for weddings in the busier months, spring and autumn on the Highveld and the warmer months in Cape Town, are often booked several months ahead, and a highly detailed design needs more lead time than a simpler one. Confirm the baker's own booking window directly, since it varies by how much custom work the design requires.

Does a wedding cake need to match the season?

Not in appearance, but the structure does need to suit it. A humid coastal reception and a dry Highveld summer place different demands on icing and support, and a baker who works regularly in your region will already have adjusted for it. Ask directly how the design changes for the season and the venue rather than assuming a standard structure works everywhere.

Can a wedding cake be transported by the couple or a family member instead of the baker?

It is possible for a small, simple cake, but a tiered design is usually safer left to the baker or a dedicated delivery service, since the internal support and the vehicle both need to be matched to the cake's weight and structure. Ask the baker whether they deliver and what that includes before assuming a family member can manage it.
